The traditional edition of Santorini with a modern twist. It was born in the 2019 yield when THALASSITIS OAK FERMENTED was renamed NYCHTERI by GAIA.

Fermentation and aging take place in different kinds and sizes of barrels. The wood is present, with notes of vanilla, all totally harmonized with the aromas of Assyrtiko.

As always, the classic nerve and the sharp acidity of Assyrtiko are not hidden, but in this case, they have allied with a roundness, a greasiness and a volume that make this wine amazingly enjoyable.

The minerality of Assyrtiko may dominate but Aidani and Athiri, the younger “brothers” of Assyrtiko have an intense fruity presence.
